    Payakumbuh, the Rendang Capital

    Payakumbuh might not be as famous as Bukittinggi, the tourism destination of West Sumatra. But the Bukittinggi tourists may not find good food if there was no Payakumbuh. "Foods from Payakumbuh are widely sold in Bukittinggi. People often think the foods are local," said Abdul Samad, Industry and Trade office at Payakumbuh regency.

    The most celebrated food from Payakumbuh is its exceptional rendang. Its cooking technique and seasonings are actually simpler than rendang from other regions. The main ingredients are meat and seasonings – pepper, galangale, ginger, onion, garlic, lime leaves and turmeric leaves all are boiled with coconut milk until it dries. The seasonings are not pre-fried so that the rendang is not too oily. They also do not use spices such as cloves or nutmegs and the like.
